Let me begin with saying that about 75% of the time, I like to cook healthy. However, these cupcakes have almost nothing healthy except for the apple sauce-butter subbing.

This past weekend I was one of 7 bridesmaids throwing a bridal shower for a girl who’s been one of my best friends since I was in 9th grade.

The night before I decided to make some mini cupcakes BUT because I couldn’t Instagram them, I neglected to take good pictures. That said, a twitter friend, @wallytee requested the recipe and to my best recollection abilities, (I have a bad habit of cooking/baking sans recipe) here it is:

1 1/4 cups of flour
1 1/8 tsp of cinnamon
1/2 tsp of nutmeg
1/2 stick butter
1 little applesauce
1 tsp baking powder
1/4 tsp of salt
1 tsp of vanilla
2 eggs
3/4 cups of sugar
1/2 cup of milk

Chocolate mousse:
1 cup heavy cream
Baking chocolate to taste
Sugar to taste


Preheat oven to 350.
Combine dry ingredients in one bowl.
In separate bowl beat eggs until they’re fluffy.
Add dry ingredients to eggs slowly, mixing well.
Combine butter, applesauce & milk vanilla in other bowl.
Combine all and again mix all really well.

Place in muffin tin with cupcake liners. Bake for 15-20 minutes (do the toothpick test).

While they’re baking add 1 cup of heavy cream + baking chocolate powder to taste & beat on high until it’s very light & fluffy. Let sit in fridge for 20-30 min.

Let cupcakes cool, add chocolate mousse to taste.

PS- to make adding the chocolate mousse easy, I poured it into a large zip lock bag before putting it in the fridge. Then for icing I cut the tip off the bag & iced.

Voila! done!
